Carpentras is not the capital city of this fruit by accident! Strawberries have been cultivated in Provence since the end of the 19th century, thanks to the creation of the canal of Carpentras which made possible the irrigation of an entire area, transforming the Comtat Venaissin into a garden for French vegetables.
Competition incited producers to multiply their efforts and propose new methods of cultivation under high shelters and the cultivation of new less fragile varieties.
Among the varieties of strawberries specific to the Comtat Venaissin one can name the Pajato and the Naiad, precocious varietals which represent 80% of the production: their fruits are large and regular with a heart shape in a dark red color.
The Ciforette and the Gariguette are early strawberries. More elongated, they are particularly flavorful and have a taste of wild strawberries. They arrive first on Provencal tables, as early as the month of March but constitute only 5% of the local production.
The Clery, the Mara des bois, new varietals created by the Interregional Center for Research and Experimentation for Strawberries, they are also very aromatic,
Thanks to these many varietals and the fame of the Carpentras strawberry, the Comtat Venaissin remains one of the most important zone of production of strawberries in Provence ; almost 300 farmers in the Carpentras area produce approximately 4 000 tons of this red fruit, which represents 31% of the national production. Half of this Provencal production is consumed locally.
With the arrival of spring, the first strawberries appear in the booths of the market of Provence where it is nice to stroll especially at the Friday market in Carpentras, classified exceptional market.
One can buy them on farmers markets or directly from farms.
For the greatest pleasure of all, strawberries are on the menu of many restaurants and are included in the recipe of many cakes, candies, ice cream...
